Vegetable Soup Recipe

Ingredients
- 1 onion chopped
- 2 large potatoes, peeled and cubed
- 2 sticks Celery
- Parsley chopped
- 4 cups water
- 1 teaspoon salt
- 1 teaspoon Black Pepper
- 3 cups Seasonal vegetables (baby carrots, spinach, peas)
Instructions
- Put all ingredients, excluding salt, pepper, and seasonal vegetables, into a big pot and boil them.
- Reduce the heat and allow it to simmer. Until the potatoes are very soft (around 25 minutes).
- Mix the seasonal vegetables and let them simmer for 10-15 minutes or until tender.
- Stir in the salt and pepper.
- Serve the soup hot.
